Meet the Expert
Eva Suter, Beverage Director, Bambino and L’Oca d’Oro (Austin, Texas)
Hailing from the Inland Northwest, Eva has been in Austin since 2012 when she moved to study playwriting as a James Michener fellow at UT. Her hospitality career ranges from fast food and neighborhood joints to finer dining and just about everything in between. After earning her master’s degree, she found her way back to the industry at Foreign & Domestic and worked with brands like Susto Mezcal, Still Austin, & Goodnight Loving Vodka to create signature cocktail recipes.
Today Suter is the beverage director at Austin’s community-driven Italian restaurant L’Oca d’Oro and recently opened (March 2024) sibling restaurant and casual pizza joint, Bambino. At L’Oca d’Oro she regularly uses ingredients such as herbs, barks, and fruit in syrups for Italian sodas and cocktails, dedicating time to the signature liqueur program which features a rotating list of housemade amari and vermouths. At Bambino, Suter has curated a beverage program of wine, beers, frozen and tap cocktails bringing together familiar flavors with subtly surprizing twists. Eva will also be seen around town slinging specialty drinks, inspired by theatre and art, with Salvage Vanguard Theatre and Fusebox.
